Chef Ernie Mejia is an Arizona native and is very familiar with Arizona's taco culture. Upon his first visit to Minnesota he decided to relocate and open the Arizona Taco Company. Chef Ernie is committed to bringing the authenticity of Arizona's taco culture to Minnesota. Chef Ernie has sourced top meat suppliers, quality produce, and by using time honored recipes with ingredients like green chilis, guajillo peppers, fresh in house made corn and flour tortillas, hot sauce, and grilled Carne Asada. Chef Ernie Mejia studied the art of cooking at Scottsdale Culinary and California Culinary Institutes where he was in the top ten percentile of his class. Chef Ernie has mastered his craft at fine dining restaurants and renowned entertainment corporations such as Universal Studios, NBC. Arizona Biltmore and the Arizona Phoenician resort. In 2015 after working under the guidance Chef Alex Stratta winner of the James Beard award it was beyond doubt that Chef Ernie Mejia was a rising star. Chef Ernie has never forgotten his roots and humble beginnings. His passion for traditional Mexican cuisine began at a young age mastering time honored recipes and since then his goal has been to bring forth the authenticity of Arizona's taco culture which has brought Chef Ernie to Minnesota and the opening of his restaurant The Arizona Taco Company.
